Ingredients of Low Fat & Vegetarian Black Bean Soup:

  • 2 can Organic low sodium black beans
  • 4 Celery stalks chopped and diced
  • 1/2 Red bell pepper chopped and diced
  • 1/2 Onion chopped
  • 2 tsp Cumin
  • 2 cup Chicken broth
  • 1 clove Galic (optional)
  • 1 dash Lemon juice
  • 4 tbsp Olive oil

Method for "Low Fat & Vegetarian Black Bean Soup":

  1. Combine oil & veggies to a medium sized pot on high heat. (*garlic optional* I prefer to use 1 tbs of garlic salt*)
  2. Let veggies sauté until onions are moderately clear.
  3. Add chicken broth and black beans to high heat
  4. Let boil for 10 minutes. Stir occasionally. (*important to stir from bottom up so beans do not stick to the bottom of pan*)
  5. Lower heat to low for 5 minutes. Stir in cumin.
  6. *optional* add lemon juice before serving
