Beans - carrot Stir Fry

Ingredients of Beans - carrot Stir Fry:
- 1/2 cup Carrots
- 1/2 cup Beans
- 1/4 tsp Turmeric powder
- 1/4 tsp Urud dal
- 1/2 tsp Mustard seeds
- to taste Salt
- Few curryleaves
- 1 tbsp Coconut oil
- 1/4 cup Grated coconut
- 1 tsp Red chilli powder
- 1/2 tsp Coriander powder
- 1/2 tsp Cumin powder
Method for "Beans - carrot Stir Fry":
- Wash the carrots and the beans well. Chop the carrots and beans finely. Keep them in a bowl.
- In a pan, heat oil, add mustard seeds. Allow them to splutter.
- Once it splutters add urad dal and curry leaves.
- Now add the chopped carrots and beans and salt mix well. Now add the turmeric powder sautÃ© for some time.
- Add little water. Cover the pan with a lid. Allow it to cook. Check in between and stir it once or twice so that the vegetables don't burn.
- Once the beans and carrots are cooked, add the grated coconut, cumin powder and coriander powder. Cover it with the lid and leave for 2 mins.
- Serve this with rice.
