Ingredients of Chicken Tortilla Soup - IT'S THE ABSOLUTE BEST!!!:

  • 1-1.5 lbs cooked chicken
  • 3-4 cups chicken broth
  • 6 corn tortillas, sliced into strips
  • 1/2 cup chopped cilantro
  • 1 can diced tomatoes with green chiles
  • 1/2 tbsp tomato paste
  • 1 large onion
  • 1 Anaheim pepper
  • 2 large limes
  • 4 tbsp chopped garlic
  • 1/2 tbsp cumin
  • 1/2 tsp coriander
  • 1 1/2-2 tbsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 packet Goya Sazon achiote con cilantro
  • 1 large bay leaf
  • 1/2 tsp dried oregano
  • 3 tbsp canola oil
  • Shredded Mexican blend cheese
  • 2 avocados, sliced

Method for "Chicken Tortilla Soup - IT'S THE ABSOLUTE BEST!!!":

  1. Roast anaheim pepper and let cool. Once cooled, slice in thin rings. Rough chop cilantro. Cut onion into quarters and pulse in food processor until almost pureed.
  2. Combine salt, pepper, cumin, coriander, garlic powder, onion powder, Sazon, oregano and chili powder in a small bowl and whisk to together.
  3. Heat chicken broth over medium high heat in a big pot until near boiling and reduce heat to low and leave it alone for a bit :) Add oil to non stick pan or heavy skillet.
  4. Heat oil over medium high heat and fry the tortilla strips (reserve some for garnish) and garlic until tortillas are crispy and garlic is light brown, about 5 minutes. Add onions and cook until reduced in half, about 5 minutes. Add sliced peppers, tomato paste, diced tomatoes and bowl of dry ingredients and keep stirring to mix together well and so it doesn't burn (i turned the heat down to medium)and then squeeze the juice of 1 to 2 limes into pan and stir until well combined.
  5. Carefully add pan mixture to broth and stir well to combine. Throw in bay leaf. Turn heat up to high and bring to a boil. Turn heat down to low and let simmer for 40 minutes. Add chicken to soup and let heat through.
  6. Ladle soup into bowls and top with sliced avocado, shredded cheese, tortilla strips and garnish with fresh cilantro. Serve with fresh lime wedges.
  7. I love this stuff!!!!
