Chicken salad with mint and toasted sesame seeds

Ingredients of Chicken salad with mint and toasted sesame seeds:
- 10 cmcucumber
- 2 boneless,skinless chicken breasts
- 3 small celery sticks, finely sliced
- 3 scallions (spring onion) thickly sliced
- 2 tbsp Thai fish sauce
- 2 tbsp lime juice
- 3 small red or green chillies, finely sliced
- 1 tbsp finely chopped mint leaves
- 1 tbsp toasted sesame seefs
- 2 tbsp sesame oil
- Lime wedges to serve
Method for "Chicken salad with mint and toasted sesame seeds":
- Prepare the cucumber,cut in half lenghthways and scrape out the seeds with teaspoon. Cut in half crossways then cut each piece into matchsticks
- Bring pan of water to boil,add chicken breast,and poach at a gentle simmer until cook through. Drain let cool
- Shred the meat into small pieces over a bowl,letting any liquid fall into the bowl. Add the cucumber,celery, scallions,fish sauce,lime juice, chillies,mint,sesame seeds and sesame oil,and stir well. Spoon onto a serving platter and serve with wedges of lime
