Ingredients of Chicken salad with mint and toasted sesame seeds:

  • 10 cmcucumber
  • 2 boneless,skinless chicken breasts
  • 3 small celery sticks, finely sliced
  • 3 scallions (spring onion) thickly sliced
  • 2 tbsp Thai fish sauce
  • 2 tbsp lime juice
  • 3 small red or green chillies, finely sliced
  • 1 tbsp finely chopped mint leaves
  • 1 tbsp toasted sesame seefs
  • 2 tbsp sesame oil
  • Lime wedges to serve

  1. Prepare the cucumber,cut in half lenghthways and scrape out the seeds with teaspoon. Cut in half crossways then cut each piece into matchsticks
  2. Bring pan of water to boil,add chicken breast,and poach at a gentle simmer until cook through. Drain let cool
  3. Shred the meat into small pieces over a bowl,letting any liquid fall into the bowl. Add the cucumber,celery, scallions,fish sauce,lime juice, chillies,mint,sesame seeds and sesame oil,and stir well. Spoon onto a serving platter and serve with wedges of lime
