Punjabi besan ki kheer

Ingredients of Punjabi besan ki kheer:

  • 1/4 th cup punjabi besan
  • 3 tbsp grated jaggery
  • 2 cups milk(preferably low fat at room temperature)
  • 1-2 tsp pure ghee
  • 1/2 cup dates
  • 1/2 tsp Cardamom powder
  • Nuts to garnish

Method for "Punjabi besan ki kheer":

  1. Soak dates in warm water for 20 minutes.
  2. Remove seeds of dates, add 1/2 cup milk and grind to a fine paste.
  3. Heat ghee in a pan and roast besan until it changes colour to dark brown but bot burnt.
  4. Add powdered or crushed jaggery. You can increase the quantity as per your taste.
  5. Switch off the flame and add remaining milk. Make sure that no lumps are formed. Keep the pan back on heat, keep it on low. Add dates paste, chopped nuts if you like.
  6. Keep stirring until it thickens in preferred consistency. It should become like rabdi/basundi. Garnish it with chopped nuts. Serve it hot or cold.
