  • 4 lbs fresh broccoli - cut to bite size florets
  • 1/2 cup Panko breadcrumbs
  • 6 tbs unsalted butter - softened, divided
  • 2 tbs flour
  • 2 cups milk (anything but skim)
  • 4 oz full fat cream cheese - softened, cubed
  • 1 1/2 cup triple cheddar blend shredded cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 pinch cayenne

Method for "Broccoli Cheese Gratin for a Crowd":

  1. Preheat oven to 450°F. Grease the bottom and sides of a 9x13 baking dish with 1 tbs of the butter. Set aside.
  2. Place a steamer basket in a large pot filled with just enough water to almost touch the bottom of the basket. Add broccoli and steam until crisp tender. About 8 minutes.
