Ingredients of Vicki's Carrot Cake FUSF:

  • For Cake
  • 1 & 1/2 cup salad oil
  • 3 eggs
  • 2 cups sugar
  • 2 &1/2 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 2 tsp vanilla
  • 1 cup grated carrots
  • 1 cup chopped nuts (optional)
  • 1 cup drained, crushed, unsweetened pineapple
  • 1 cup coconut
  • For Frosting
  • 1 pkg (8 oz) cream cheese, softened and room temperature
  • 1 pound confectioner sugar
  • 1 & 1/2 tsp vanilla

  1. Pre-heat oven to 325 degrees and grease & flour two 9" cake pans
  2. In a standing mixer on medium, beat the oil and sugar until dispersed. On low, add the eggs, one at a time, then the vanilla
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon and salt
  4. Add to the wet ingredients with mixer on low, 1/3 at a time until combined
  5. Add in carrots, nuts, pineapple and coconut
  6. Pour into pans, bake for 45-50 minutes
  7. Cool on wire rack
  8. For Frosting: Beat cream cheese until light then add in sugar and vanilla
  9. Decorate
