Ingredients of Carrot cake protein bites:

  • 3 carrots peeled and cut
  • 8 medjool dates pitted
  • 1/2 cup pecans
  • 1 tbsp nut butter
  • 1 cup dry oats
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 tsp cinnamon
  • 1/8 tsp sea salt
  • 1 scoop protein powder

Method for "Carrot cake protein bites":

  1. Add carrots in food processor and finely chop
  2. Remove carrots put in a bowl
  3. Add dates and pecans to processor Until finely chopped add carrots back to processor finely chop
  4. Add remaining ingredients. Form into 1 inch balls and refrigerate for 4 hours
  5. If mixture is too wet add 1 tablespoon flax meal or protein powder. Store in refrigerator in air tight container for up to 5 days
