Butternut Squash Soup with lemon and coconut

Ingredients of Butternut Squash Soup with lemon and coconut:
- 2 1/2 lb butternut squash, peeled and seeded (4 cups chopped)
- 1 piece lemon or lime zested
- 3 slice ginger or 1 teaspoon of powdered ginger
- 1/2 Large onion sliced
- 1 clove garlic clove, crushed
- 2 piece Jalapeno chiles or cayenne pepper to taste.
- 1 piece lemon juiced or 2 limes juiced
- 2 cup coconut milk
- 1 tbsp olive oil
- 1 tsp curry powder
Method for "Butternut Squash Soup with lemon and coconut":
- Cook chopped squash, onion, garlic for 10 minutes stirring occasionally.
- Add coconut milk, cook for 30 minutes on stove
- Puree and add lime juice.
